Water Bath Canning Bread & Butter Pickles:
An all time favorite amongst our family and friends the bread and butter pickle.
15 c. pickling
3 onions, sliced thinly
1/4 c. coarse salt
4 c. cracked ice
2 1/2 c. cider vinegar
2 1/2 c. sugar
3/4 tsp. turmeric
1/2 tsp. celery seed
1 Tbsp. mustard seeds
In a large bowl combine your onions, pickling cucumbers, coarse salt and ice. Mix well. Put a plate with a weight on top of these items and allow to stand for 3 hours. A gallon jug of water can work as your weight.
In a large pot combine your mustard seed, turmeric, celery seed, and vinegar. Add your drained cucumbers and onions. Place your pot on medium low heat. Do not bring to a boil but bring almost to a boil. Remove pot from heat.
Seal your cucumber mixture in sterilized jars. Hot water bath for 10 minutes.
Dry off your jars.
Place on a cookie sheet in the oven right side up at 225 degrees farenheight for 15 minutes. Turn off your ovena nd leave until you need them or are ready to put away.
Be sure to check the seal of your jars.
